- 4 cups tomatoes, chopped
- 1 cup water
- ½ bunch basil
- 2 cloves garlic
- ¼ cup sundried tomatoes, soaked and use the water
- 2 tsp paprika
- ¼ cup lemon juice
- a couple of pinches of cayenne pepper
- 1 tsp unrefined salt
- 1/2 tsp black pepper
- 1 tbs olive oil
- Place all ingredients in a blender, for about a minute or until smooth.
- Serve in punch glasses, or in small bowls.
For a chunkier soup, adding sweetcorn or diced avocado or both make this dish really satisfying. Sweetcorn kernels act like a sort of crouton!
